River-scape views, lush gardens, championship golf courses and a beach lagoon afford Hyatt Regency Sanctuary Cove five-star status, alongside its reputation as a premier dining destination. The Gold Coast resort continues to be a hotspot for gourmet cuisine with the release of fresh á la carte dining menus under the direction of new Executive Chef Nitin Kumar.
Taking pride of place in Australia’s leading resort style community Sanctuary Cove just a 45-minute drive from both Brisbane and Surfer’s Paradise, Hyatt Regency Sanctuary Cove offers a culinary escape for those looking to dine in picturesque surrounds, as well as in-house guests no matter the occasion.
The new á la carte menu in Cove Café is in-keeping with the venue’s relaxed ambience and Fountain Terrace vistas, offering simple yet delicious fare. With a focus on multicultural, fresh flavours, the new menu highlights healthy choices and high quality local produce, including fresh seafood, Queensland organic vegetables, pasta and meats.
For a casual bite with a classic twist, try the Wagyu Burger with salad, fried egg, bacon, gherkin, aged cheddar and fries or for something a little more lavish, indulge in the Byron Bay Berkshire pork loin with asparagus, celeriac and mustard apple. Cove Café is open daily for lunch and on Saturday nights for dinner with their ever-evolving, sumptuous buffet themes.
Lunch is also available in The Verandah Bar should a cocktail from the beverage menu stir your appetite. Snack on steamed green lip mussels in white wine, shallots, parsley and cream sauce or a pizza margherita with tomatoes, mozzarella and fresh basil while sipping on an expertly mixed Red Apple Martini or a Caprioska, to name a few.
Award-winning signature restaurant, The Fireplace continues to update the menu seasonally and the new offering for winter complements the restaurants intimate lighting and solid timber furnishings. Embodying the elegance of a stately dining room, The Fireplace is fine dining at its best, welcoming diners with a warm atmosphere and an open plan kitchen, where chefs are on show as they prepare their provincial-style cuisine in the custom-built wood fired oven.
The new menu features a wintery succulence that is the perfect indulgence amidst the current chill, such as the Fireplace Beef Stroganoff with cornichons, pomme puree and paprika for entrée, or the Sovereign Lamb Rack with pepperonata, goats cheese polenta croquettes and thyme jus as a main. The Fireplace is open nightly from 6pm – 10pm. Bookings are essential, please phone 07 5530 1234 to reserve a table.
